Foods That Should Never Go in Your Fridge — Here’s Why

Refrigeration has always been regarded as the top method for maintaining food’s freshness, however, this is not the case for all foods. Regularly consumed items such as fruits and vegetables might indeed lose their taste, feel, and overall quality if stored in a cold atmosphere. Here are two usual products you should never store in your refrigerator—and the reasons for that.

Chocolate

Have you ever wondered why supermarkets never put chocolate in the fridge? That’s because there is a very good justification for it. Chocolate’s creation is a complex process where the main ingredients, namely cocoa, milk, and other elements, are subjected to heating and cooling in the right sequence. Among the cocoa crystals that impart the smoothness and gloss of chocolate, some crystals are destroyed during the freezing process.

The chocolate has already lost its allure and texture when put in the refrigerator due to the “blooming” effect, a whitish, powdery layer that forms on the surface. The same thing occurs with chocolate in the fridge; its flavors can become muted. The chocolate will lose its rich flavor and silky texture if it is not stored at room temperature in a cool, dry place. Actually, this rule applies to all kinds of chocolate including white chocolate.

Jam and Jelly

Just because preservatives are typically used in large amounts in jams and jellies that are bought in stores, it does not mean that the refrigeration of these products is required for their freshness.Cold jam on warm toast might still sound great but storing it in the fridge can diminish the pleasure of it.

The moisture in jam kept in a refrigerator will eventually be released and it will inevitably seep into your bread and that is how the toast becomes soggy. Storing jams and jellies at room temperature not only helps in keeping them but also in making them very good for spreading while keeping the toast crisp.

To sum up, refrigeration is a must for many other foods, but chocolate and jam are most enjoyable when they are out of the fridge — that is where their superior taste and texture come through.
